Objective

Know the origin of the HACCP system, develop the 7 principles that compose it according to the recommendations established by the Codex Alimentarius and the regulation of FDA 21 CFR 120, as well as the responsibilities of the Directorate for its implementation and maintenance in the industry of foods.

Overview

The 16-hour session for BASIC HACCP was exclusively designed for participants with low knowledge or in need of refreshing about the origins of HACCP, its invention through the development of the space age, as well as the internal needs of the company Pillsbury, Co and the FDA for low acid products. The development of the 5 prerequisites, 7 principles and potential dangers during food processing, the construction of an adequate, reasonable and effective HACCP Plan under study of the literature and bibliographic references according to the product when designing.
